Tom wins South West Chef of the Year 2011

Our Head chef Tom Scade travelled to Exeter College on the 12th of November to compeate in South West Chef of the Year 2011, the brief was to cook two portions of a starter and a main course in 1 1/2 hours using the best produce the south west has to offer. Tom cooked a starter of Soused Mackerel with Celeriac and Apple Remoularde, Deli Farm Copa Ham, and a main of Loin of Fallow Deer, Choux Farci, Glazed Carrotsand Quince Compote. All the ingrdients Tom used were as local as possiable with the majority of the Vegetables grown by Richard only a couple of miles from the restaurant, the Mackerel was line caught on the Friday morning, the Fallow Deer was shot locally and supplied by Watts Butchers in Rock and The Copa ham made by Deli Farm in Delabole. 

Tom up against some very good compition with chefs from The Tereby Ams, Devon, HH Restaurant, Devon and The Eastbury Hotel, Dorset. Who all produced some great dishes but in the end Tom did enough to win the compition. The Judges were Chris and James Tanner of Tanners Restaurant, Plymouth, Darren Hosgrove of Ashburton Cookery School and Staurt Downie of South Sands Hotel, Salcombe.
